Veal Parmesan

Ingredients
- Mild Italian Sausage1/2 lb.
- Tomato Puree1 Can (10 3/4 oz.)
- Tomato Paste1 Can (6 oz.)
- Sugar1 Teaspoon
- Oregano1/2 Teaspoon
- Basil1/2 Teaspoon
- Bay Leaf1
- Water6 oz.
- Veal Steak (I use Veal Cutlets)2 lbs.
- Bread Crumbs---
- Butter---
- Salt---
- Pepper---
- Garlic (minced)1 clove
- Mozzarella Cheese1 Pkg. (8 oz.)
- Parmesan Cheese (Grated)---
Instructions
Skin sausage and cut into small pieces. Fry slowly until brown and free of fat. Drain fat from skillet. Combine the first 8 ingredients and cook slowly, covered for 30 minutes. (Sauce can be made day ahead).
Bread and fast fry veal until golden brown. Place in a large baking pan. Season meat well. Cover each steak with a slice of mozzarella cheese; spoon sauce over cheese and sprinkle with Parmesan cheese.
Cover and bake at 350 degrees for 30 to 45 minutes.
