Veal Parmesan

Ingredients

  • Mild Italian Sausage1/2 lb.
  • Tomato Puree1 Can (10 3/4 oz.)
  • Tomato Paste1 Can (6 oz.)
  • Sugar1 Teaspoon
  • Oregano1/2 Teaspoon
  • Basil1/2 Teaspoon
  • Bay Leaf1
  • Water6 oz.
  • Veal Steak (I use Veal Cutlets)2 lbs.
  • Bread Crumbs---
  • Butter---
  • Salt---
  • Pepper---
  • Garlic (minced)1 clove
  • Mozzarella Cheese1 Pkg. (8 oz.)
  • Parmesan Cheese (Grated)---

Instructions

Skin sausage and cut into small pieces. Fry slowly until brown and free of fat. Drain fat from skillet. Combine the first 8 ingredients and cook slowly, covered for 30 minutes. (Sauce can be made day ahead).

Bread and fast fry veal until golden brown. Place in a large baking pan. Season meat well. Cover each steak with a slice of mozzarella cheese; spoon sauce over cheese and sprinkle with Parmesan cheese.

Cover and bake at 350 degrees for 30 to 45 minutes.
