Oven Roasted Cauliflower

Oven roasted cauliflower with garlic, olive oil, and lemon juice.

Ingredients

  • Cauliflower Florets5 to 6 Cups
  • Extra-virgin Olive Oil1/4 Cup
  • Garlic (Sliced)1 Tablespoon
  • Fresh Lemon Juice2 Tablespoons
  • Salt1 Teaspoon
  • Black Pepper1/2 Teaspoon
  • Parmesan Cheese (Freshly Grated)2 Tablespoons
  • Chopped Chives for Garnish---

Instructions

Preheat oven to 500 degrees.

Place cauliflower florets in a roasting pan. Drizzle olive oil over cauliflower and season with garlic, lemon juice, salt, and pepper. Place pan in preheated oven and cook 15 minutes, stirring occasionally to ensure even roasting.

Remove from the oven and sprinkle with Parmesan. Garnish with chives and serve immediately while still warm.

Note: I mix all of the ingredients together except the cheese and chives before putting them in the roasting pan. I mince the garlic instead of slicing it and I use more lemon and cheese.
