Pink Lentil Curry (Masoor Dal)

This is the quickest dal to cook. It takes only 20 min. without using a pressure cooker. The pink color of the lentils becomes pale yellow once cooked. The flavor is more subtle than green lentils.

Ingredients
- pink lentils1 cup
- water3 cups
- tumeric powder1 tsp
- lemon juice1 T
- garam masala powder1 tsp
- mango powder1 tsp
- BAGHAR ......
- oil or ghee1 T
- cumin seeds1 tsp
- cayenne pepper1 tsp
- coriander powder1 tsp
- GARNISH ......
- onion fried until golden in oil2 slices
- chopped fresh coriander or mint leavesa few
Instructions
Note: BAGHAR and GARNISH sections are different components to the same dish.
Carefully pick over the lentils, discarding discolored ones or any foeign matter. Wash in a sieve under running water. In a heavy saucepan boil the lentils in water with tumeric. When cooked, turn off heat; add salt, lemon juice and garam masala (and mango powder -- optional).
Heat ghee; add cumin seeds. Fry 2 minutes. Turn off heat. Add cayenne and coriander. Stir and pour over the cooked lentils. Mix well. Garnish.
