Spaghetti Pie

Ingredients

  • Spaghetti (uncooked)6 Oz
  • Hot Water4 Cups
  • Oil1 Teaspoon
  • Salt1/2 Teaspoon
  • Margarine2 Tablespoons
  • Eggs, beaten2
  • Parmesan Cheese1/3 Cup
  • Ground Beef1 lb.
  • Onion, Chopped1
  • Green Pepper, Chopped1/3 Cup
  • Tomatoes, Chopped1 Cup
  • Tomato Paste1 Can (6 Oz.)
  • Flour1 Tablespoon
  • Garlic, Minced1 Clove
  • Sugar1 Teaspoon
  • Oregano1 Teaspoon
  • Salt1/2 Teaspoon
  • Cottage Cheese1 Cup
  • Mozzarella, Shredded1 Cup

Instructions

Crust: Break spaghetti in half and place in 2 qt. microproof casserole with hot water, oil, and salt. Microwave, uncovered, on high power, 14 minutes, or until tender. Drain; rinse with hot water and mix with margarine, eggs, and cheese. Lightly grease a 10 inch microproof pie plate. Form spaghetti mixture into crust. Cover with vented plastic wrap - microwave on med. power (50%) 5 to 6 minutes until crust is just set, turning dish halfway through.

Filling: Brown meat with onion and green pepper. Add tomatoes, tomato paste, flour, garlic, sugar, oregano, and salt.

Spread cottage cheese over bottom of cooked crust. Add meat mixture. Microwave covered - med. power (50%) until heated. Sprinkle with cheese. Let stand 5 minutes.
