Quinoa Salad

Ingredients
- Quinoa1 cup
- Water2 cups
- Olive oil1/4 cup
- Limes2 (about 1/4 cup)
- Ground cumin2 tsp.
- Crushed red pepper flakes1/2 tsp.
- Grape or cherry tomatoes1 1/2 cups
- Black beans1 15 oz. can
- Green onions, finely chopped5
- Chopped fresh cilantro (optional)1/4 cup
- Salt1/4 to 1 tsp.
- Ground pepper1/4 to 1/2 tsp.
Instructions
1. Bring quinoa and water to a boil. Reduce heat, cover, and simmer until tender and water has been absorbed, 10 to 15 minutes. Set aside to cool.
2. Whisk together in a bowl the olive oil, lime juice, cumin, and red pepper flakes.
3. Combine quinoa, tomatoes, black beans, and green onions together in a large bowl.
4. Pour dressing over quinoa mixture; toss to coat. Stir in cilantro. Season with salt and pepper.
5. Serve immediately or chill in the refrigerator.
