Quinoa Salad

Ingredients

  • Quinoa1 cup
  • Water2 cups
  • Olive oil1/4 cup
  • Limes2 (about 1/4 cup)
  • Ground cumin2 tsp.
  • Crushed red pepper flakes1/2 tsp.
  • Grape or cherry tomatoes1 1/2 cups
  • Black beans1 15 oz. can
  • Green onions, finely chopped5
  • Chopped fresh cilantro (optional)1/4 cup
  • Salt1/4 to 1 tsp.
  • Ground pepper1/4 to 1/2 tsp.

Instructions

1. Bring quinoa and water to a boil. Reduce heat, cover, and simmer until tender and water has been absorbed, 10 to 15 minutes. Set aside to cool.

2. Whisk together in a bowl the olive oil, lime juice, cumin, and red pepper flakes.

3. Combine quinoa, tomatoes, black beans, and green onions together in a large bowl.

4. Pour dressing over quinoa mixture; toss to coat. Stir in cilantro. Season with salt and pepper.

5. Serve immediately or chill in the refrigerator.
