Cream Cheese Pecan Pie

Ingredients

  • Cream Cheese (Softened)8 oz.
  • Eggs (Divided)4
  • Sugar1/3 Cup
  • Vanilla (Divided)2 Teaspoons
  • Pie Shell1 (10 inch)
  • Chopped Pecans1 1/4 Cups
  • Light Corn Syrup1 Cup
  • Sugar1/4 Cup
  • Salt1/4 Teaspoon

Instructions

Beat together cream cheese, 1 egg, 1/3 cup sugar and 1 teaspoon vanilla until smooth. Spread in pastry shell. Sprinkle with pecans.

In another bowl, beat 3 eggs until frothy. Add corn syrup, 1/4 cup sugar, salt, and 1 teaspoon vanilla. Beat until blended. Gently pour mixture over pecans.

Bake at 375 degrees about 40 minutes, until knife inserted halfway between center and edge comes out clean. Place on rack to cool.
