Apple Pecan Loaf

Ingredients
- Apples (Peeled, Diced)4 Cups
- Broken Pecans1 Cup
- Sugar2 Cups Plus 2 Teaspoons
- Flour3 Cups
- Nutmeg1/4 Teaspoon
- Cinnamon3/4 Teaspoon (1/4 + 1/2)
- Allspice1/4 Teaspoon
- Salt1/2 Teaspoon
- Baking Soda2 Teaspoons
- Butter1/2 lb.
- Vanilla1 Teaspoon
- Eggs (Well Beaten)2
- Vegetable Oil---
Instructions
Combine apples, pecans, and 2 cups sugar in mixing bowl and let stand 1 hour. Stir often so mixture makes its own juice. Preheat oven to 325 degrees. Mix together flour, nutmeg, 1/4 teaspoon cinnamon, allspice, salt, and baking soda, and add to apple mixture. Combine well (Best done with hands).
Melt butter and add vanilla. Add butter mixture and eggs to apple mixture. Combine well, using hands. Grease 5 x 9 x 2 3/4 in. loaf pan with vegetable oil and line with wax paper. Grease again. Pour batter into pan and bake 1 1/2 hours.
Mix remaining 2 teaspoons sugar and 1/2 teaspoon cinnamon and dust over top of loaf 30 minutes before baking time has elapsed. Remove from oven and cool 45 minutes in pan. Remove loaf from pan and cool another 90 minutes. Slice and serve. Makes 12 or more servings.
Note: Use 1 large bread pan or 2 medium pans.
